- Pasta (spaghetti or penne) - 200 grams
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Red bell pepper - 1, diced
- Zucchini - 1 medium, diced
- Cherry tomatoes - 200 grams, halved
- Black olives - 50 grams, pitted and sliced
- Fresh basil - 10 grams, chopped
- Fresh thyme - 1 teaspoon, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the diced red bell pepper and zucchini to the skillet. Cook for 5-7 minutes until the vegetables are tender.
- Stir in the halved cherry tomatoes and cook for another 3-4 minutes until they start to soften.
- Add the cooked pasta to the skillet along with the sliced black olives, chopped basil, thyme, salt, and pepper. Toss everything together to combine well.
- Cook for an additional 2-3 minutes to heat through, then remove from heat.
- Serve hot, garnished with extra basil if desired.
