- Fresh parsley - 2 tablespoons, chopped
- Garlic - 1 clove, minced
- Butter - 30 grams
- Parmesan cheese - 30 grams, grated
Steps
- Peel and chop the potatoes into small pieces. Boil them in salted water for about 15 minutes until fork-tender.
- Drain the potatoes and mash them in a bowl until smooth. Allow them to cool slightly.
- Add the gluten-free flour, egg, olive oil, and salt to the mashed potatoes. Mix until a dough forms.
- On a floured surface, divide the dough into four pieces and roll each piece into a thin rope. Cut the ropes into small pieces to form the pasta shapes.
- In a large pot, bring salted water to a boil and cook the pasta for about 3-4 minutes or until they float to the surface. Drain and set aside.
- In a skillet, melt the butter over medium heat. Add minced garlic and cook until fragrant, about 1 minute.
- Add the cooked pasta to the skillet, tossing gently to coat with the butter and garlic. Season with black pepper and stir in the chopped parsley.
