Ingredients

  • Potatoes - 300 grams
  • Gluten-free flour - 150 grams
  • Egg - 1 large
  • Olive oil - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped
  • Garlic - 1 clove, minced
  • Butter - 30 grams
  • Parmesan cheese - 30 grams, grated

Steps

  1. Peel and chop the potatoes into small pieces. Boil them in salted water for about 15 minutes until fork-tender.
  2. Drain the potatoes and mash them in a bowl until smooth. Allow them to cool slightly.
  3. Add the gluten-free flour, egg, olive oil, and salt to the mashed potatoes. Mix until a dough forms.
  4. On a floured surface, divide the dough into four pieces and roll each piece into a thin rope. Cut the ropes into small pieces to form the pasta shapes.
  5. In a large pot, bring salted water to a boil and cook the pasta for about 3-4 minutes or until they float to the surface. Drain and set aside.
  6. In a skillet, melt the butter over medium heat. Add minced garlic and cook until fragrant, about 1 minute.
  7. Add the cooked pasta to the skillet, tossing gently to coat with the butter and garlic. Season with black pepper and stir in the chopped parsley.
  8. Serve immediately, garnished with grated Parmesan cheese.
