  • Rice flour - 100 grams
  • Egg - 1 large
  • Apple (preferably Granny Smith) - 1 medium, peeled and grated
  • Goat cheese - 50 grams, crumbled
  • Olive oil - 2 tablespoons
  • Garlic - 1 clove, minced
  • Fresh thyme - 1 teaspoon, chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Water - 200 milliliters

Steps

  1. In a mixing bowl, combine rice flour and salt. Create a well in the center and add the egg.
  2. Gradually mix in the water while kneading the dough until it is smooth and pliable. Let it rest for 10 minutes.
  3. Roll out the dough on a lightly floured surface to about 2-3 mm thickness. Cut into your desired pasta shape, such as tagliatelle.
  4. Bring a large pot of salted water to a boil. Add the pasta and cook for 3-4 minutes or until al dente. Drain and set aside.
  5. In a skillet, heat olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
  6. Stir in the grated apple and cook for another 2-3 minutes until slightly softened.
  7. Add the cooked pasta to the skillet along with the fresh thyme, crumbled goat cheese, salt, and pepper. Toss gently to combine and heat through.
  8. Serve immediately, drizzling with a bit more olive oil if desired.
