- Egg - 1 large
- Apple (preferably Granny Smith) - 1 medium, peeled and grated
- Goat cheese - 50 grams, crumbled
- Olive oil - 2 tablespoons
- Garlic - 1 clove, minced
- Fresh thyme - 1 teaspoon, chopped
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Water - 200 milliliters
Steps
- In a mixing bowl, combine rice flour and salt. Create a well in the center and add the egg.
- Gradually mix in the water while kneading the dough until it is smooth and pliable. Let it rest for 10 minutes.
- Roll out the dough on a lightly floured surface to about 2-3 mm thickness. Cut into your desired pasta shape, such as tagliatelle.
- Bring a large pot of salted water to a boil. Add the pasta and cook for 3-4 minutes or until al dente. Drain and set aside.
- In a skillet, heat olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
- Stir in the grated apple and cook for another 2-3 minutes until slightly softened.
- Add the cooked pasta to the skillet along with the fresh thyme, crumbled goat cheese, salt, and pepper. Toss gently to combine and heat through.
- Serve immediately, drizzling with a bit more olive oil if desired.
