Ingredients

  • Pasta (fettuccine or tagliatelle) - 200 grams
  • Chestnut puree - 150 grams
  • Heavy cream - 100 ml
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Shallot - 1, finely chopped
  • Fresh thyme - 1 teaspoon, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Grated Parmesan cheese - 30 grams (optional)
  • Chopped parsley - for garnish

Steps

  1. Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and chopped shallot, sauté until softened and fragrant, about 2-3 minutes.
  3. Stir in the chestnut puree and heavy cream. Mix well and let it simmer on low heat for about 5 minutes until heated through.
  4. Add fresh thyme, salt, and black pepper to the sauce, adjusting seasoning to taste.
  5. Once the pasta is cooked, reserve a small cup of pasta water and drain the rest. Add the pasta to the skillet with the sauce, tossing to combine. If the sauce is too thick, add a bit of the reserved pasta water to reach desired consistency.
  6. Serve the pasta warm, topped with grated Parmesan cheese and garnished with chopped parsley.
