- Fresh thyme - 1 teaspoon, chopped
- Salt - to taste
- Black pepper - to taste
- Grated Parmesan cheese - 30 grams (optional)
- Chopped parsley - for garnish
Steps
- Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and chopped shallot, sauté until softened and fragrant, about 2-3 minutes.
- Stir in the chestnut puree and heavy cream. Mix well and let it simmer on low heat for about 5 minutes until heated through.
- Add fresh thyme, salt, and black pepper to the sauce, adjusting seasoning to taste.
- Once the pasta is cooked, reserve a small cup of pasta water and drain the rest. Add the pasta to the skillet with the sauce, tossing to combine. If the sauce is too thick, add a bit of the reserved pasta water to reach desired consistency.
- Serve the pasta warm, topped with grated Parmesan cheese and garnished with chopped parsley.
