  • Pasta (fettuccine or tagliatelle) - 200 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Heavy cream - 150 ml
  • Parmesan cheese - 50 grams, grated
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Nutmeg - a pinch

Steps

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente.
  2. While the pasta is cooking, heat the olive oil in a large pan over medium heat. Add the minced garlic and sauté until fragrant, about 1-2 minutes.
  3. Reduce the heat to low and pour in the heavy cream. Stir to combine and allow it to warm up without boiling.
  4. Add the grated Parmesan cheese to the cream sauce and stir until melted and smooth. Season with salt, black pepper, and a pinch of nutmeg.
  5. Once the pasta is cooked, reserve a cup of pasta water and drain the rest. Add the drained pasta to the cream sauce, tossing to coat. If the sauce is too thick, add a little reserved pasta water to reach the desired consistency.
  6. Finally, stir in the chopped parsley and adjust the seasoning if necessary. Serve hot, garnished with additional Parmesan and parsley if desired.
