  • Cherry tomatoes - 150 grams, halved
  • Zucchini - 1 medium, diced
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Fresh basil - 10 grams, chopped
  • Fresh parsley - 10 grams, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente.
  2. While the pasta is cooking, heat olive oil in a large skillet over medium heat.
  3. Add minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
  4. Add diced zucchini to the skillet and cook for about 5-7 minutes until tender.
  5. Stir in the halved cherry tomatoes and cook for another 3-4 minutes until they start to soften.
  6. Once the pasta is cooked, reserve 1/2 cup of pasta water, then drain the pasta.
  7. Add the drained pasta to the skillet with the vegetables, and mix well.
  8. Crumble the goat cheese into the pasta mixture and toss, adding reserved pasta water a little at a time until the desired creaminess is achieved.
  9. Season with salt, black pepper, chopped basil, and parsley, mixing thoroughly.
  10. Serve immediately, garnished with extra herbs if desired.
