  • Salt - for pasta water
  • Fresh parsley - 1 tablespoon, chopped (for garnish)

Steps

  1. Bring a large pot of salted water to a boil and cook the spaghetti according to package instructions until al dente.
  2. While the pasta is cooking, heat a pan over medium heat and add the diced pancetta. Sauté until crispy, about 5-7 minutes.
  3. In a bowl, whisk together the eggs, grated Parmesan cheese, and a generous amount of black pepper until well combined.
  4. Once the spaghetti is cooked, reserve about 1 cup of pasta water, then drain the pasta.
  5. Quickly add the hot pasta to the pan with the pancetta, removing it from heat.
  6. Pour the egg and cheese mixture over the pasta, stirring rapidly to create a creamy sauce. Add reserved pasta water a little at a time to reach desired consistency.
