  • Gluten-free pasta - 200 grams
  • Olive oil - 3 tablespoons
  • Garlic - 2 cloves, minced
  • Capers - 2 tablespoons, rinsed and drained
  • Lemon zest - 1 teaspoon
  • Lemon juice - 2 tablespoons
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Bring a large pot of salted water to a boil and cook the gluten-free pasta according to package instructions until al dente.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
  3. Add the minced garlic to the skillet and sauté for about 1 minute until fragrant, being careful not to burn it.
  4. Stir in the capers and lemon zest, and cook for another 2 minutes.
  5. Once the pasta is done, reserve about 1/4 cup of the pasta water, then drain the pasta.
  6. Add the drained pasta to the skillet, along with the lemon juice and reserved pasta water. Toss everything together well.
  7. Season with salt and black pepper to taste, and sprinkle with the chopped parsley before serving.
