- Gluten-free pasta - 200 grams
- Olive oil - 3 tablespoons
- Garlic - 2 cloves, minced
- Capers - 2 tablespoons, rinsed and drained
- Lemon zest - 1 teaspoon
- Lemon juice - 2 tablespoons
- Fresh parsley - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- Bring a large pot of salted water to a boil and cook the gluten-free pasta according to package instructions until al dente.
- While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
- Add the minced garlic to the skillet and sauté for about 1 minute until fragrant, being careful not to burn it.
- Stir in the capers and lemon zest, and cook for another 2 minutes.
- Once the pasta is done, reserve about 1/4 cup of the pasta water, then drain the pasta.
- Add the drained pasta to the skillet, along with the lemon juice and reserved pasta water. Toss everything together well.
- Season with salt and black pepper to taste, and sprinkle with the chopped parsley before serving.
