  • Brousse cheese - 150 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Fresh basil - 10 grams, chopped
  • Fresh parsley - 10 grams, chopped
  • Lemon juice - 1 tablespoon
  • Lemon zest - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Pine nuts - 30 grams, toasted

Steps

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
  3. Add the minced garlic to the skillet and sauté for about 1 minute until fragrant, being careful not to burn it.
  4. Once the pasta is cooked, reserve 1/2 cup of pasta water, then drain the pasta and add it directly to the skillet with the garlic.
  5. Add the brousse cheese, chopped basil, chopped parsley, lemon juice, and lemon zest to the skillet, mixing well to combine.
  6. If the pasta seems dry, gradually add some reserved pasta water until the desired creaminess is achieved.
  7. Season the pasta with salt and black pepper to taste, then gently fold in the toasted pine nuts.
  8. Serve immediately, garnished with additional herbs or a drizzle of olive oil if desired.
