Ingredients

  • Fusilli pasta - 200 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Shallots - 1, finely chopped
  • Tomatoes - 2, diced
  • Fennel bulb - 1 small, sliced
  • Red bell pepper - 1, diced
  • Fish stock - 500 ml
  • Saffron - 1/4 teaspoon
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Halal fish (e.g., cod or haddock) - 200 grams, cut into bite-sized pieces
  • Prawns - 100 grams, peeled and deveined
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon - 1, juiced

Steps

  1. Bring a large pot of salted water to a boil and cook the fusilli pasta according to package instructions until al dente. Drain and set aside.
  2. In a large pan, heat the olive oil over medium heat. Add the minced garlic and chopped shallots and sauté until they are soft and fragrant, about 2-3 minutes.
  3. Add the sliced fennel and diced red bell pepper to the pan, cooking for an additional 5 minutes until they are tender.
  4. Stir in the diced tomatoes, saffron, paprika, salt, and pepper, cooking for another 2 minutes.
  5. Pour in the fish stock and bring the mixture to a simmer. Allow to cook for 5 minutes to let the flavors meld.
  6. Add the Halal fish and prawns to the pan, cooking for another 5-7 minutes until the seafood is cooked through and opaque.
  7. Stir in the cooked pasta and lemon juice, mixing gently to combine everything well. Cook for an additional 2 minutes to heat through.
  8. Serve hot, garnished with chopped fresh parsley.
