- Fusilli pasta - 200 grams
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Shallots - 1, finely chopped
- Tomatoes - 2, diced
- Fennel bulb - 1 small, sliced
- Red bell pepper - 1, diced
- Fish stock - 500 ml
- Saffron - 1/4 teaspoon
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Halal fish (e.g., cod or haddock) - 200 grams, cut into bite-sized pieces
- Prawns - 100 grams, peeled and deveined
- Fresh parsley - 2 tablespoons, chopped
- Lemon - 1, juiced
Steps
- Bring a large pot of salted water to a boil and cook the fusilli pasta according to package instructions until al dente. Drain and set aside.
- In a large pan, heat the olive oil over medium heat. Add the minced garlic and chopped shallots and sauté until they are soft and fragrant, about 2-3 minutes.
- Add the sliced fennel and diced red bell pepper to the pan, cooking for an additional 5 minutes until they are tender.
- Stir in the diced tomatoes, saffron, paprika, salt, and pepper, cooking for another 2 minutes.
- Pour in the fish stock and bring the mixture to a simmer. Allow to cook for 5 minutes to let the flavors meld.
- Add the Halal fish and prawns to the pan, cooking for another 5-7 minutes until the seafood is cooked through and opaque.
- Stir in the cooked pasta and lemon juice, mixing gently to combine everything well. Cook for an additional 2 minutes to heat through.
- Serve hot, garnished with chopped fresh parsley.
