Ingredients

  • Gluten-free pasta - 200 grams
  • Olive oil - 4 tablespoons
  • Garlic - 4 cloves, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Red pepper flakes - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Parmesan cheese (optional) - 30 grams, grated

Steps

  1. Bring a large pot of salted water to a boil and cook the gluten-free pasta according to package instructions until al dente.
  2. While the pasta cooks, heat the olive oil in a large skillet over medium heat.
  3. Add the minced garlic to the skillet and sauté for about 1-2 minutes, or until fragrant but not browned.
  4. Stir in the red pepper flakes and cook for an additional 30 seconds.
  5. Once the pasta is ready, reserve 1/2 cup of the pasta cooking water and drain the rest.
  6. Add the drained pasta to the skillet with the garlic oil and toss to coat.
  7. If the pasta seems dry, add a little of the reserved pasta water until desired consistency is reached.
  8. Stir in the fresh parsley, and season with salt and black pepper to taste.
  9. Serve hot, topped with grated Parmesan cheese if desired.
