- Gluten-free pasta - 200 grams
- Olive oil - 4 tablespoons
- Garlic - 4 cloves, minced
- Fresh parsley - 2 tablespoons, chopped
- Red pepper flakes - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Parmesan cheese (optional) - 30 grams, grated
Steps
- Bring a large pot of salted water to a boil and cook the gluten-free pasta according to package instructions until al dente.
- While the pasta cooks, heat the olive oil in a large skillet over medium heat.
- Add the minced garlic to the skillet and sauté for about 1-2 minutes, or until fragrant but not browned.
- Stir in the red pepper flakes and cook for an additional 30 seconds.
- Once the pasta is ready, reserve 1/2 cup of the pasta cooking water and drain the rest.
- Add the drained pasta to the skillet with the garlic oil and toss to coat.
- If the pasta seems dry, add a little of the reserved pasta water until desired consistency is reached.
- Stir in the fresh parsley, and season with salt and black pepper to taste.
- Serve hot, topped with grated Parmesan cheese if desired.
