Ingredients

  • Buckwheat flour - 150 grams
  • Egg - 1 large
  • Water - 50 ml
  • Salt - 1/2 teaspoon
  • Olive oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Cherry tomatoes - 200 grams, halved
  • Fresh basil - a handful, chopped
  • Parmesan cheese - 30 grams, grated (optional)
  • Black pepper - to taste

Steps

  1. In a mixing bowl, combine the buckwheat flour and salt. Make a well in the center and add the egg and water.
  2. Mix until the dough comes together, then knead for about 5 minutes until smooth. If the dough is too dry, add a little more water.
  3. Wrap the dough in plastic wrap and let it rest for 15 minutes.
  4. While the dough is resting, heat olive oil in a pan over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
  5. Add the halved cherry tomatoes to the pan and cook for about 5-7 minutes until they soften. Season with salt and black pepper, and stir in the chopped basil.
  6. Roll out the rested dough on a floured surface to about 2-3 mm thickness. Cut into your desired pasta shape (tagliatelle or fettuccine works well).
  7. Bring a pot of salted water to a boil. Cook the freshly made pasta for 3-4 minutes or until they float to the surface. Drain the pasta.
  8. Toss the cooked pasta with the tomato and basil mixture in the pan. Serve topped with grated Parmesan cheese if desired.
