- Buckwheat flour - 150 grams
- Egg - 1 large
- Water - 50 ml
- Salt - 1/2 teaspoon
- Olive oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Cherry tomatoes - 200 grams, halved
- Fresh basil - a handful, chopped
- Parmesan cheese - 30 grams, grated (optional)
- Black pepper - to taste
Steps
- In a mixing bowl, combine the buckwheat flour and salt. Make a well in the center and add the egg and water.
- Mix until the dough comes together, then knead for about 5 minutes until smooth. If the dough is too dry, add a little more water.
- Wrap the dough in plastic wrap and let it rest for 15 minutes.
- While the dough is resting, heat olive oil in a pan over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
- Add the halved cherry tomatoes to the pan and cook for about 5-7 minutes until they soften. Season with salt and black pepper, and stir in the chopped basil.
- Roll out the rested dough on a floured surface to about 2-3 mm thickness. Cut into your desired pasta shape (tagliatelle or fettuccine works well).
- Bring a pot of salted water to a boil. Cook the freshly made pasta for 3-4 minutes or until they float to the surface. Drain the pasta.
- Toss the cooked pasta with the tomato and basil mixture in the pan. Serve topped with grated Parmesan cheese if desired.
