- Olive oil - 3 tablespoons
- Fresh basil - 10 leaves, chopped
- Parmesan cheese - 30g, grated
- Salt - to taste
- Black pepper - to taste
Steps
- Bring a large pot of salted water to a boil and cook the gluten-free pasta according to package instructions until al dente.
- While the pasta cooks, heat olive oil in a skillet over medium heat. Add the diced red and yellow bell peppers and sauté for about 5-7 minutes until they are tender.
- Add the minced garlic to the skillet and sauté for an additional 1-2 minutes until fragrant.
- Once the pasta is cooked, reserve 1/2 cup of pasta water, then drain the pasta and add it directly to the skillet with the sautéed peppers.
- Toss the pasta and peppers together, adding reserved pasta water as needed to create a light sauce.
- Stir in the chopped basil, grated Parmesan cheese, and season with salt and black pepper to taste.
- Serve immediately, garnished with extra basil and cheese if desired.
