  • Gluten-free pasta - 150g
  • Red bell pepper - 1 large, diced
  • Yellow bell pepper - 1 large, diced
  • Garlic - 2 cloves, minced
  • Olive oil - 3 tablespoons
  • Fresh basil - 10 leaves, chopped
  • Parmesan cheese - 30g, grated
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Bring a large pot of salted water to a boil and cook the gluten-free pasta according to package instructions until al dente.
  2. While the pasta cooks, heat olive oil in a skillet over medium heat. Add the diced red and yellow bell peppers and sauté for about 5-7 minutes until they are tender.
  3. Add the minced garlic to the skillet and sauté for an additional 1-2 minutes until fragrant.
  4. Once the pasta is cooked, reserve 1/2 cup of pasta water, then drain the pasta and add it directly to the skillet with the sautéed peppers.
  5. Toss the pasta and peppers together, adding reserved pasta water as needed to create a light sauce.
  6. Stir in the chopped basil, grated Parmesan cheese, and season with salt and black pepper to taste.
  7. Serve immediately, garnished with extra basil and cheese if desired.
