- Pasta (spaghetti or fettuccine) - 150 grams
- Leeks - 2 medium (about 200 grams)
- Heavy cream - 100 ml
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Parmesan cheese - 50 grams, grated
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.
- While the pasta cooks, clean and slice the leeks into thin rings, discarding the dark green parts.
- In a large skillet, heat the olive oil over medium heat and add the minced garlic. Sauté for about 1 minute until fragrant.
- Add the sliced leeks to the skillet and cook for 5-7 minutes until they are soft and slightly caramelized.
- Pour in the heavy cream and stir well, allowing it to simmer for about 3-4 minutes until slightly thickened.
- Add the cooked pasta to the skillet along with the reserved pasta water, stirring to combine everything well.
- Mix in the grated Parmesan cheese, and season with salt and black pepper to taste. Cook for another 2 minutes, allowing the cheese to melt and coat the pasta.
- Serve hot, garnished with fresh parsley and additional Parmesan if desired.
