Ingredients

  • Pasta (spaghetti or fettuccine) - 150 grams
  • Leeks - 2 medium (about 200 grams)
  • Heavy cream - 100 ml
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Parmesan cheese - 50 grams, grated
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.
  2. While the pasta cooks, clean and slice the leeks into thin rings, discarding the dark green parts.
  3. In a large skillet, heat the olive oil over medium heat and add the minced garlic. Sauté for about 1 minute until fragrant.
  4. Add the sliced leeks to the skillet and cook for 5-7 minutes until they are soft and slightly caramelized.
  5. Pour in the heavy cream and stir well, allowing it to simmer for about 3-4 minutes until slightly thickened.
  6. Add the cooked pasta to the skillet along with the reserved pasta water, stirring to combine everything well.
  7. Mix in the grated Parmesan cheese, and season with salt and black pepper to taste. Cook for another 2 minutes, allowing the cheese to melt and coat the pasta.
  8. Serve hot, garnished with fresh parsley and additional Parmesan if desired.
