  • Pasta (penne or fusilli) - 200 grams
  • Green olives (pitted and chopped) - 100 grams
  • Black olives (pitted and chopped) - 100 grams
  • Olive oil - 3 tablespoons
  • Garlic (minced) - 2 cloves
  • Cherry tomatoes (halved) - 150 grams
  • Fresh basil leaves (chopped) - 30 grams
  • Parmesan cheese (grated) - 30 grams
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente, usually about 10-12 minutes.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
  3. Add the minced garlic to the skillet and sauté for about 1 minute until fragrant, being careful not to burn it.
  4. Stir in the cherry tomatoes and cook for 3-4 minutes until they start to soften.
  5. Add the chopped green and black olives to the skillet, and cook for an additional 2-3 minutes, allowing the flavors to meld.
  6. Once the pasta is cooked, reserve 1/2 cup of the pasta cooking water and drain the rest.
  7. Add the drained pasta to the skillet along with the reserved pasta water, and toss everything together gently.
  8. Stir in the chopped basil and season with salt and black pepper to taste.
  9. Serve immediately, topped with grated Parmesan cheese.
