- Eggplant - 1 small, diced
- Cherry tomatoes - 150 grams, halved
- Olive oil - 3 tablespoons
- Garlic - 2 cloves, minced
- Fresh basil - 10 grams, chopped
- Salt - to taste
- Black pepper - to taste
- Parmesan cheese (optional, for serving) - 20 grams
Steps
- Preheat your grill or grill pan over medium-high heat.
- In a large bowl, toss the zucchini, bell pepper, and eggplant with 2 tablespoons of olive oil, garlic, salt, and black pepper.
