- Bell pepper (red or yellow) - 1 medium, diced
- Cherry tomatoes - 150 grams, halved
- Spinach - 100 grams, fresh
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Dried oregano - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Parmesan cheese - 30 grams, grated (optional)
Steps
- Bring a large pot of salted water to a boil and cook the whole wheat pasta according to package instructions until al dente, about 8-10 minutes.
- While the pasta is cooking, heat the olive oil in a large pan over medium heat and add the minced garlic, sautéing for 1-2 minutes until fragrant.
- Add the diced zucchini and bell pepper to the pan and sauté for 5-7 minutes until they begin to soften.
- Stir in the halved cherry tomatoes and cook for an additional 3 minutes until they soften slightly.
- Add the fresh spinach to the pan and cook until just wilted, about 1-2 minutes.
- Once the pasta is cooked, reserve 1/2 cup of pasta water, then drain the pasta and add it to the vegetable mixture in the pan.
- Toss everything together, adding reserved pasta water as needed to create a light sauce. Season with dried oregano, salt, and black pepper to taste.
- Serve hot, topped with grated Parmesan cheese if desired.
