Ingredients

  • Pasta (linguine or spaghetti) - 200 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Shallot - 1 medium, finely chopped
  • Vegetable broth - 250 ml
  • Seaweed (dried wakame or nori) - 10 grams, rehydrated and chopped
  • Vegan shrimp (or plant-based seafood alternative) - 100 grams
  • Cherry tomatoes - 150 grams, halved
  • Zucchini - 1 medium, spiralized or diced
  • Capers - 1 tablespoon, rinsed
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Cook the pasta according to package instructions in salted boiling water until al dente. Drain and set aside, reserving a little pasta water.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and chopped shallot, sautéing until fragrant and translucent, about 3-4 minutes.
  3. Pour in the vegetable broth and bring to a simmer. Stir in the rehydrated seaweed and let it cook for 2 minutes.
  4. Add the vegan shrimp, halved cherry tomatoes, and zucchini to the skillet. Cook for another 5-7 minutes until the tomatoes soften and the shrimp is heated through.
  5. Stir in the capers, lemon juice, and cooked pasta. Toss everything together, adding reserved pasta water if needed to create a light sauce. Season with salt and black pepper to taste.
  6. Remove from heat and garnish with fresh parsley before serving.
