- Seaweed (dried wakame or nori) - 10 grams, rehydrated and chopped
- Vegan shrimp (or plant-based seafood alternative) - 100 grams
- Cherry tomatoes - 150 grams, halved
- Zucchini - 1 medium, spiralized or diced
- Capers - 1 tablespoon, rinsed
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- Cook the pasta according to package instructions in salted boiling water until al dente. Drain and set aside, reserving a little pasta water.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and chopped shallot, sautéing until fragrant and translucent, about 3-4 minutes.
- Pour in the vegetable broth and bring to a simmer. Stir in the rehydrated seaweed and let it cook for 2 minutes.
- Add the vegan shrimp, halved cherry tomatoes, and zucchini to the skillet. Cook for another 5-7 minutes until the tomatoes soften and the shrimp is heated through.
- Stir in the capers, lemon juice, and cooked pasta. Toss everything together, adding reserved pasta water if needed to create a light sauce. Season with salt and black pepper to taste.
- Remove from heat and garnish with fresh parsley before serving.
