- Garlic - 2 cloves, minced
- Shallot - 1, finely chopped
- Vegetable broth - 100 ml
- Lemon - 1, zested and juiced
- Fresh basil - 10 grams, chopped
- Parmesan cheese - 30 grams, grated
- Salt - to taste
- Black pepper - to taste
Steps
- Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente, usually about 8-10 minutes.
- While the pasta cooks, heat the olive oil in a pan over medium heat. Add the minced garlic and chopped shallot, and sauté until softened, about 2-3 minutes.
- Add the shelled fava beans to the pan and pour in the vegetable broth. Cook for about 5 minutes, stirring occasionally, until the beans are tender.
- Once the pasta is cooked, reserve 50 ml of the pasta water, then drain the pasta and add it to the pan with the fava beans.
- Add the lemon zest, lemon juice, salt, and pepper to taste. Toss everything together, adding reserved pasta water as needed to create a light sauce.
- Stir in the chopped fresh basil and grated Parmesan cheese just before serving.
- Plate the pasta and garnish with extra basil and Parmesan if desired. Serve immediately.
