- Garlic - 2 cloves, minced
- Mixed mushrooms (cremini, shiitake, and button) - 250 grams, sliced
- Vegetable broth - 150 ml
- Heavy cream - 100 ml
- Fresh thyme - 1 teaspoon, chopped
- Salt - to taste
- Black pepper - to taste
- Parmesan cheese - 30 grams, grated (optional for vegans)
- Fresh parsley - for garnish, chopped
Steps
- Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside, reserving a cup of pasta water.
- In a large skillet over medium heat, add olive oil. Once hot, add the chopped shallot and sauté for 2-3 minutes until translucent.
- Add the minced garlic and sliced mushrooms to the skillet. Cook for about 5-7 minutes, stirring occasionally, until the mushrooms are browned and tender.
- Pour in the vegetable broth and bring to a simmer. Allow it to reduce slightly for about 3-4 minutes.
- Stir in the heavy cream and fresh thyme, then season with salt and black pepper to taste. Simmer for an additional 2-3 minutes until the sauce thickens.
- Combine the cooked pasta with the mushroom sauce in the skillet. If the sauce is too thick, add a little reserved pasta water to achieve the desired consistency.
- Serve immediately, garnished with grated Parmesan cheese (if using) and chopped fresh parsley.
