- Heavy cream - 50 ml
- Parmesan cheese - 30 grams, grated
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente.
- While the pasta cooks, heat olive oil in a large skillet over medium heat.
- Add the chopped shallot and sauté for 2-3 minutes until translucent.
- Stir in the minced garlic and grated carrots, cooking for an additional 5 minutes until the carrots are tender.
- Pour in the vegetable broth and let it simmer for 5 minutes to reduce slightly.
- Add the heavy cream to the skillet, stirring well to combine, and let it cook for another 3-4 minutes until heated through.
- Once the pasta is cooked, reserve a bit of the pasta water, then drain the pasta and add it to the skillet with the carrot sauce.
- Toss the pasta in the sauce, adding a splash of reserved pasta water if needed for a creamier consistency.
- Stir in the grated Parmesan cheese, and season with salt and black pepper to taste.
- Serve hot, garnished with fresh parsley.
