  • Garlic - 1 clove, minced
  • Vegetable broth - 200 ml
  • Heavy cream - 50 ml
  • Parmesan cheese - 30 grams, grated
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente.
  2. While the pasta cooks, heat olive oil in a large skillet over medium heat.
  3. Add the chopped shallot and sauté for 2-3 minutes until translucent.
  4. Stir in the minced garlic and grated carrots, cooking for an additional 5 minutes until the carrots are tender.
  5. Pour in the vegetable broth and let it simmer for 5 minutes to reduce slightly.
  6. Add the heavy cream to the skillet, stirring well to combine, and let it cook for another 3-4 minutes until heated through.
  7. Once the pasta is cooked, reserve a bit of the pasta water, then drain the pasta and add it to the skillet with the carrot sauce.
  8. Toss the pasta in the sauce, adding a splash of reserved pasta water if needed for a creamier consistency.
  9. Stir in the grated Parmesan cheese, and season with salt and black pepper to taste.
  10. Serve hot, garnished with fresh parsley.
