Ingredients

  • Pasta (fusilli or penne) - 200 g
  • Broccoli florets - 200 g
  • Olive oil - 3 tablespoons
  • Garlic - 3 cloves, minced
  • Red pepper flakes - 1/4 teaspoon
  • Parmesan cheese (grated) - 50 g
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon
  • Fresh parsley (chopped) - 2 tablespoons

Steps

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente.
  2. During the last 3 minutes of cooking, add the broccoli florets to the pot with the pasta.
  3. While the pasta and broccoli are cooking, heat the olive oil in a large skillet over medium heat.
  4. Add the minced garlic and red pepper flakes to the skillet, sautéing for about 1-2 minutes until fragrant but not browned.
  5. Once the pasta and broccoli are done, reserve 1/2 cup of pasta water, then drain the rest.
  6. Add the drained pasta and broccoli to the skillet with the garlic oil, tossing to combine.
  7. If needed, add reserved pasta water a little at a time to achieve the desired consistency.
  8. Stir in the grated Parmesan cheese, salt, black pepper, and lemon juice, mixing until well combined.
  9. Remove from heat and garnish with chopped parsley before serving.
