- Smoked salmon - 100 grams, sliced
- Fresh dill - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Zest of 1 lemon
- Olive oil - 2 tablespoons
- Garlic - 1 clove, minced
- Cherry tomatoes - 100 grams, halved
- Salt - to taste
- Black pepper - to taste
- Parmesan cheese - 30 grams, grated (optional)
Steps
- Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente.
- While the pasta is cooking, heat olive oil in a large pan over medium heat and sauté the minced garlic for about 1 minute until fragrant.
- Add the halved cherry tomatoes to the pan and cook for another 2-3 minutes until they start to soften.
- Once the pasta is cooked, reserve 1/2 cup of pasta water, then drain the pasta and add it directly to the pan with the tomatoes and garlic.
- Add the smoked salmon, dill, lemon juice, lemon zest, and a splash of reserved pasta water to the pan. Toss everything together gently to combine and heat through.
- Season with salt and black pepper to taste. Serve immediately, topped with grated Parmesan cheese if desired.
