Ingredients

  • Pasta (fettuccine or tagliatelle) - 150 grams
  • Smoked salmon - 100 grams, sliced
  • Fresh dill - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Zest of 1 lemon
  • Olive oil - 2 tablespoons
  • Garlic - 1 clove, minced
  • Cherry tomatoes - 100 grams, halved
  • Salt - to taste
  • Black pepper - to taste
  • Parmesan cheese - 30 grams, grated (optional)

Steps

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente.
  2. While the pasta is cooking, heat olive oil in a large pan over medium heat and sauté the minced garlic for about 1 minute until fragrant.
  3. Add the halved cherry tomatoes to the pan and cook for another 2-3 minutes until they start to soften.
  4. Once the pasta is cooked, reserve 1/2 cup of pasta water, then drain the pasta and add it directly to the pan with the tomatoes and garlic.
  5. Add the smoked salmon, dill, lemon juice, lemon zest, and a splash of reserved pasta water to the pan. Toss everything together gently to combine and heat through.
  6. Season with salt and black pepper to taste. Serve immediately, topped with grated Parmesan cheese if desired.
