- Pasta (penne or fusilli) - 200g
- Chicken breast - 250g, diced
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Onion - 1 small, diced
- Bell pepper - 1 medium, diced
- Heavy cream - 100ml
- Parmesan cheese - 50g, grated
- Fresh parsley - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
- Paprika - 1 teaspoon
Steps
- Cook the pasta in a pot of salted boiling water according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the diced chicken and cook until browned and cooked through, about 5-7 minutes.
- Add the minced garlic, diced onion, and bell pepper to the skillet. Sauté for another 3-4 minutes until the vegetables are softened.
- Pour in the heavy cream and stir to combine. Allow the mixture to simmer for 2-3 minutes until slightly thickened.
- Stir in the grated Parmesan cheese, fresh parsley, paprika, and season with salt and black pepper to taste.
- Add the cooked pasta to the skillet and toss everything together until the pasta is well coated with the sauce.
- Serve immediately, garnished with additional parsley and Parmesan cheese if desired.
