Steps
- Bring a large pot of salted water to a boil. Add the whole wheat pasta and cook according to package instructions until al dente.
- While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
- Add the cherry tomatoes to the skillet and cook for 3-4 minutes until they begin to soften.
- Stir in the fresh spinach and cook until wilted, about 2 minutes. Season with salt and black pepper to taste.
- Once the pasta is cooked, reserve 1/2 cup of pasta water and drain the rest. Add the pasta to the skillet with the vegetables.
- Crumble the goat cheese over the pasta and toss everything together, adding reserved pasta water as needed to create a creamy sauce.
- Finish with fresh basil, adjusting seasoning if necessary. Serve immediately.
