  • Cherry tomatoes - 150 grams
  • Spinach (fresh) - 100 grams
  • Garlic - 2 cloves
  • Olive oil - 2 tablespoons
  • Fresh basil - 10 grams
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Bring a large pot of salted water to a boil. Add the whole wheat pasta and cook according to package instructions until al dente.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
  3. Add the cherry tomatoes to the skillet and cook for 3-4 minutes until they begin to soften.
  4. Stir in the fresh spinach and cook until wilted, about 2 minutes. Season with salt and black pepper to taste.
  5. Once the pasta is cooked, reserve 1/2 cup of pasta water and drain the rest. Add the pasta to the skillet with the vegetables.
  6. Crumble the goat cheese over the pasta and toss everything together, adding reserved pasta water as needed to create a creamy sauce.
  7. Finish with fresh basil, adjusting seasoning if necessary. Serve immediately.
