Ingredients

  • Pasta (fusilli or penne) - 200 grams
  • Butter - 30 grams
  • All-purpose flour - 30 grams
  • Milk - 300 milliliters
  • Grated Gruyère cheese - 100 grams
  • Grated Parmesan cheese - 50 grams
  • Salt - 1 teaspoon
  • Black pepper - ½ teaspoon
  • Nutmeg - a pinch
  • Chopped fresh parsley - for garnish

Steps

  1. Bring a large pot of salted water to a boil and cook the pasta according to the package instructions until al dente. Drain and set aside.
  2. In a medium saucepan, melt the butter over medium heat. Once melted, add the all-purpose flour and whisk continuously for about 1-2 minutes to form a roux.
  3. Gradually pour in the milk while whisking to prevent lumps. Continue to whisk until the mixture thickens and comes to a gentle simmer, about 5 minutes.
  4. Reduce the heat to low and stir in the Gruyère and Parmesan cheeses until melted and smooth. Season with salt, black pepper, and nutmeg to taste.
  5. Add the cooked pasta to the cheese sauce, stirring to coat the pasta evenly with the sauce.
  6. Serve hot, garnished with chopped fresh parsley.
