- Coconut milk - 200 ml
- Vegetable broth - 100 ml
- Bell pepper, sliced - 1 medium
- Spinach, fresh - 100 grams
- Salt - to taste
- Black pepper - to taste
- Fresh coriander, chopped - for garnish
Steps
- Cook the pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and grated ginger to the skillet, cooking for another minute until fragrant.
- Stir in the curry powder and cook for 1 minute to release its flavors.
- Pour in the coconut milk and vegetable broth, stirring to combine. Bring the mixture to a gentle simmer.
- Add the sliced bell pepper and cook for 5 minutes until softened.
- Stir in the fresh spinach and cook until wilted, about 2 minutes. Season with salt and black pepper to taste.
- Add the cooked pasta to the skillet, tossing to coat it in the curry sauce. Heat through for another 2 minutes.
- Serve hot, garnished with fresh coriander.
