  • Coconut milk - 200 ml
  • Vegetable broth - 100 ml
  • Bell pepper, sliced - 1 medium
  • Spinach, fresh - 100 grams
  • Salt - to taste
  • Black pepper - to taste
  • Fresh coriander, chopped - for garnish

Steps

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and grated ginger to the skillet, cooking for another minute until fragrant.
  4. Stir in the curry powder and cook for 1 minute to release its flavors.
  5. Pour in the coconut milk and vegetable broth, stirring to combine. Bring the mixture to a gentle simmer.
  6. Add the sliced bell pepper and cook for 5 minutes until softened.
  7. Stir in the fresh spinach and cook until wilted, about 2 minutes. Season with salt and black pepper to taste.
  8. Add the cooked pasta to the skillet, tossing to coat it in the curry sauce. Heat through for another 2 minutes.
  9. Serve hot, garnished with fresh coriander.
