- Lemon juice - 60 ml (about 1 large lemon)
- Lemon zest - 1 teaspoon
- Heavy cream - 100 ml
- Parmesan cheese - 50 grams, grated
- Fresh parsley - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- Bring a large pot of salted water to a boil and cook the gluten-free pasta according to package instructions until al dente.
- While the pasta cooks, heat the olive oil in a large skillet over medium heat and add the minced garlic. Sauté for about 1-2 minutes until fragrant.
- Add the lemon juice and lemon zest to the skillet, stirring to combine, and let it simmer for 2-3 minutes.
- Add the heavy cream to the skillet, stirring to incorporate, and let it simmer for another 2-3 minutes until slightly thickened.
- Once the pasta is cooked, reserve 1/2 cup of pasta water, then drain the pasta and add it directly to the skillet with the lemon cream sauce.
- Toss the pasta in the sauce, adding reserved pasta water as needed to achieve desired consistency.
- Stir in the grated Parmesan cheese, chopped parsley, and season with salt and black pepper to taste.
- Serve immediately with extra Parmesan and parsley on top if desired.
