  • Gluten-free pasta - 200 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Lemon juice - 60 ml (about 1 large lemon)
  • Lemon zest - 1 teaspoon
  • Heavy cream - 100 ml
  • Parmesan cheese - 50 grams, grated
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Bring a large pot of salted water to a boil and cook the gluten-free pasta according to package instructions until al dente.
  2. While the pasta cooks, heat the olive oil in a large skillet over medium heat and add the minced garlic. Sauté for about 1-2 minutes until fragrant.
  3. Add the lemon juice and lemon zest to the skillet, stirring to combine, and let it simmer for 2-3 minutes.
  4. Add the heavy cream to the skillet, stirring to incorporate, and let it simmer for another 2-3 minutes until slightly thickened.
  5. Once the pasta is cooked, reserve 1/2 cup of pasta water, then drain the pasta and add it directly to the skillet with the lemon cream sauce.
  6. Toss the pasta in the sauce, adding reserved pasta water as needed to achieve desired consistency.
  7. Stir in the grated Parmesan cheese, chopped parsley, and season with salt and black pepper to taste.
  8. Serve immediately with extra Parmesan and parsley on top if desired.
