Ingredients

  • Gluten-free pasta - 150 grams
  • Fresh basil leaves - 30 grams
  • Garlic - 2 cloves
  • Olive oil - 60 ml
  • Parmesan cheese - 30 grams, grated
  • Heavy cream - 100 ml
  • Salt - to taste
  • Black pepper - to taste
  • Pine nuts - 20 grams, toasted

Steps

  1. Bring a pot of salted water to a boil and cook the gluten-free pasta according to package instructions until al dente, usually about 8-10 minutes.
  2. While the pasta cooks, prepare the basil sauce. In a blender, combine fresh basil leaves, garlic, olive oil, and half of the grated Parmesan cheese. Blend until smooth.
  3. In a saucepan over medium heat, pour the basil mixture and add the heavy cream. Stir well and let it simmer for about 5 minutes, allowing the flavors to meld.
  4. Once the pasta is cooked, reserve a small cup of pasta water, then drain the pasta.
  5. Add the drained pasta to the saucepan with the basil cream sauce. Toss to coat the pasta evenly, adding reserved pasta water a little at a time if the sauce is too thick.
  6. Season with salt and black pepper to taste.
  7. Serve the pasta hot, garnished with the remaining grated Parmesan cheese and toasted pine nuts.
