- Gluten-free pasta - 150 grams
- Fresh basil leaves - 30 grams
- Garlic - 2 cloves
- Olive oil - 60 ml
- Parmesan cheese - 30 grams, grated
- Heavy cream - 100 ml
- Salt - to taste
- Black pepper - to taste
- Pine nuts - 20 grams, toasted
Steps
- Bring a pot of salted water to a boil and cook the gluten-free pasta according to package instructions until al dente, usually about 8-10 minutes.
- While the pasta cooks, prepare the basil sauce. In a blender, combine fresh basil leaves, garlic, olive oil, and half of the grated Parmesan cheese. Blend until smooth.
- In a saucepan over medium heat, pour the basil mixture and add the heavy cream. Stir well and let it simmer for about 5 minutes, allowing the flavors to meld.
- Once the pasta is cooked, reserve a small cup of pasta water, then drain the pasta.
- Add the drained pasta to the saucepan with the basil cream sauce. Toss to coat the pasta evenly, adding reserved pasta water a little at a time if the sauce is too thick.
- Season with salt and black pepper to taste.
- Serve the pasta hot, garnished with the remaining grated Parmesan cheese and toasted pine nuts.
