Ingredients

  • Agar-agar powder - 5 grams
  • Lemon juice - 1 tablespoon
  • Cornstarch - 2 tablespoons (for dusting)
  • Optional: Natural fruit flavoring - a few drops

Steps

  1. In a saucepan, combine the fruit puree, sugar, and lemon juice. Heat over medium heat, stirring until the sugar dissolves.
  2. Sprinkle the agar-agar over the mixture and bring it to a gentle boil while stirring continuously. Allow it to boil for 2-3 minutes to activate the agar-agar.
  3. Remove the saucepan from heat and pour the mixture into a small, lined square or rectangular mold. Smooth the top with a spatula.
  4. Let the mixture cool at room temperature for about 20 minutes, then transfer it to the refrigerator to set for at least 2 hours.
  5. Once set, remove the pâte de fruits from the mold and cut it into small squares. Dust each piece lightly with cornstarch to prevent sticking.
  6. Store the pâte de fruits in an airtight container in the refrigerator for up to one week.
