- Sugar - 100 grams
- Agar-agar powder - 5 grams
- Lemon juice - 1 tablespoon
- Cornstarch - 2 tablespoons (for dusting)
- Optional: Natural fruit flavoring - a few drops
Steps
- In a saucepan, combine the fruit puree, sugar, and lemon juice. Heat over medium heat, stirring until the sugar dissolves.
- Sprinkle the agar-agar over the mixture and bring it to a gentle boil while stirring continuously. Allow it to boil for 2-3 minutes to activate the agar-agar.
- Remove the saucepan from heat and pour the mixture into a small, lined square or rectangular mold. Smooth the top with a spatula.
- Let the mixture cool at room temperature for about 20 minutes, then transfer it to the refrigerator to set for at least 2 hours.
- Once set, remove the pâte de fruits from the mold and cut it into small squares. Dust each piece lightly with cornstarch to prevent sticking.
- Store the pâte de fruits in an airtight container in the refrigerator for up to one week.
