- All-purpose flour - 250 grams
- Vegan butter - 125 grams
- Cold water - 60 ml
- Salt - 1/2 teaspoon
- Mushrooms (finely chopped) - 100 grams
- Firm tofu (crumbled) - 150 grams
- Carrot (grated) - 1 medium
- Onion (finely chopped) - 1 small
- Garlic (minced) - 2 cloves
- Fresh thyme (chopped) - 1 teaspoon
- Nutmeg (grated) - 1/4 teaspoon
- Soy sauce - 1 tablespoon
- Black pepper - 1/2 teaspoon
- Plant-based milk - 2 tablespoons
Steps
- In a mixing bowl, combine the all-purpose flour and salt. Cut in the vegan butter until the mixture resembles coarse crumbs.
- Gradually add cold water, mixing until a dough forms. Wrap the dough in plastic wrap and refrigerate for 30 minutes.
- In a skillet, sauté the onion and garlic over medium heat until translucent. Add the mushrooms and cook until they release their moisture.
- Stir in the grated carrot, crumbled tofu, thyme, nutmeg, soy sauce, and black pepper. Cook for another 5 minutes, then remove from heat and let it cool.
- Preheat the oven to 200°C (392°F).
- Roll out the chilled dough on a lightly floured surface to fit a small baking dish or pie dish.
- Transfer half of the dough to the baking dish, pressing it into the bottom and up the sides. Fill with the vegetable and tofu mixture, spreading it evenly.
- Roll out the remaining dough and cover the filling, sealing the edges by pressing them together. Cut slits in the top for steam to escape.
- Brush the top with plant-based milk for a golden finish.
- Bake in the preheated oven for 25-30 minutes or until the pastry is golden brown. Let it cool slightly before serving.
