Ingredients

  • All-purpose flour - 250 grams
  • Vegan butter - 125 grams
  • Cold water - 60 ml
  • Salt - 1/2 teaspoon
  • Mushrooms (finely chopped) - 100 grams
  • Firm tofu (crumbled) - 150 grams
  • Carrot (grated) - 1 medium
  • Onion (finely chopped) - 1 small
  • Garlic (minced) - 2 cloves
  • Fresh thyme (chopped) - 1 teaspoon
  • Nutmeg (grated) - 1/4 teaspoon
  • Soy sauce - 1 tablespoon
  • Black pepper - 1/2 teaspoon
  • Plant-based milk - 2 tablespoons

Steps

  1. In a mixing bowl, combine the all-purpose flour and salt. Cut in the vegan butter until the mixture resembles coarse crumbs.
  2. Gradually add cold water, mixing until a dough forms. Wrap the dough in plastic wrap and refrigerate for 30 minutes.
  3. In a skillet, sauté the onion and garlic over medium heat until translucent. Add the mushrooms and cook until they release their moisture.
  4. Stir in the grated carrot, crumbled tofu, thyme, nutmeg, soy sauce, and black pepper. Cook for another 5 minutes, then remove from heat and let it cool.
  5. Preheat the oven to 200°C (392°F).
  6. Roll out the chilled dough on a lightly floured surface to fit a small baking dish or pie dish.
  7. Transfer half of the dough to the baking dish, pressing it into the bottom and up the sides. Fill with the vegetable and tofu mixture, spreading it evenly.
  8. Roll out the remaining dough and cover the filling, sealing the edges by pressing them together. Cut slits in the top for steam to escape.
  9. Brush the top with plant-based milk for a golden finish.
  10. Bake in the preheated oven for 25-30 minutes or until the pastry is golden brown. Let it cool slightly before serving.
