- Puff pastry - 250 grams
- Cooked green lentils - 100 grams
- Carrot - 1 medium, diced
- Zucchini - 1 medium, diced
- Mushrooms - 100 grams, finely chopped
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Fresh thyme - 1 teaspoon, chopped
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 1 tablespoon
- Vegetable broth - 100 ml
- Egg (for egg wash) - 1 large
Steps
- Preheat the oven to 200°C (400°F).
- In a skillet, heat olive oil over medium heat. Add the onion and garlic, sautéing until translucent.
- Add the diced carrot, zucchini, and mushrooms to the skillet, cooking for about 5-7 minutes until softened.
- Stir in the cooked lentils, vegetable broth, thyme, salt, and pepper, cooking for an additional 5 minutes. Remove from heat and let the mixture cool.
- Roll out the puff pastry on a lightly floured surface into a rectangle, approximately 5mm thick.
- Place half of the pastry on a baking sheet covered with parchment paper.
- Spread the cooled lentil and vegetable mixture evenly over the pastry base.
- Cover with the second half of the pastry, sealing the edges by crimping with a fork.
- Cut a few slits in the top of the pastry to allow steam to escape. Brush the top with beaten egg.
- Bake in the preheated oven for 25-30 minutes, or until golden brown.
- Remove from the oven and let it cool for a few minutes before slicing and serving.
