Ingredients

  • Puff pastry - 250 grams
  • Cooked green lentils - 100 grams
  • Carrot - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Mushrooms - 100 grams, finely chopped
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Fresh thyme - 1 teaspoon, chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 1 tablespoon
  • Vegetable broth - 100 ml
  • Egg (for egg wash) - 1 large

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a skillet, heat olive oil over medium heat. Add the onion and garlic, sautéing until translucent.
  3. Add the diced carrot, zucchini, and mushrooms to the skillet, cooking for about 5-7 minutes until softened.
  4. Stir in the cooked lentils, vegetable broth, thyme, salt, and pepper, cooking for an additional 5 minutes. Remove from heat and let the mixture cool.
  5. Roll out the puff pastry on a lightly floured surface into a rectangle, approximately 5mm thick.
  6. Place half of the pastry on a baking sheet covered with parchment paper.
  7. Spread the cooled lentil and vegetable mixture evenly over the pastry base.
  8. Cover with the second half of the pastry, sealing the edges by crimping with a fork.
  9. Cut a few slits in the top of the pastry to allow steam to escape. Brush the top with beaten egg.
  10. Bake in the preheated oven for 25-30 minutes, or until golden brown.
  11. Remove from the oven and let it cool for a few minutes before slicing and serving.
