Ingredients

  • Puff pastry - 250 grams
  • Olive oil - 2 tablespoons
  • Shallots - 2, finely chopped
  • Garlic - 2 cloves, minced
  • Mushrooms - 200 grams, chopped
  • Spinach - 150 grams, fresh or frozen
  • Cream cheese - 100 grams
  • Grated Gruyère cheese - 50 grams
  • Nutmeg - 1/4 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Egg (for egg wash) - 1

Steps

  1. Preheat your oven to 200°C (390°F).
  2. In a pan, heat olive oil over medium heat. Add finely chopped shallots and minced garlic, sauté until translucent.
  3. Add chopped mushrooms to the pan and cook until they release their moisture and start to brown.
  4. Stir in the spinach and cook until wilted. Remove from heat and let cool slightly.
  5. In a bowl, combine the cooled mushroom and spinach mixture with cream cheese, grated Gruyère, nutmeg, salt, and black pepper. Mix well.
  6. Roll out the puff pastry on a lightly floured surface to about 3mm thickness.
  7. Cut the pastry into two rectangles (about 15x20 cm).
  8. Spoon the vegetable mixture onto one half of each pastry rectangle, leaving space at the edges.
  9. Fold the pastry over to encase the filling and press the edges to seal. Crimp with a fork for decoration.
  10. Beat the egg and brush it over the top of each pastry for a golden finish.
  11. Place the pastries on a baking sheet lined with parchment paper and bake in the preheated oven for 25-30 minutes, or until golden brown.
  12. Remove from the oven and let cool for a few minutes before serving.
