- Puff pastry - 250 grams
- Olive oil - 2 tablespoons
- Shallots - 2, finely chopped
- Garlic - 2 cloves, minced
- Mushrooms - 200 grams, chopped
- Spinach - 150 grams, fresh or frozen
- Cream cheese - 100 grams
- Grated Gruyère cheese - 50 grams
- Nutmeg - 1/4 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Egg (for egg wash) - 1
Steps
- Preheat your oven to 200°C (390°F).
- In a pan, heat olive oil over medium heat. Add finely chopped shallots and minced garlic, sauté until translucent.
- Add chopped mushrooms to the pan and cook until they release their moisture and start to brown.
- Stir in the spinach and cook until wilted. Remove from heat and let cool slightly.
- In a bowl, combine the cooled mushroom and spinach mixture with cream cheese, grated Gruyère, nutmeg, salt, and black pepper. Mix well.
- Roll out the puff pastry on a lightly floured surface to about 3mm thickness.
- Cut the pastry into two rectangles (about 15x20 cm).
- Spoon the vegetable mixture onto one half of each pastry rectangle, leaving space at the edges.
- Fold the pastry over to encase the filling and press the edges to seal. Crimp with a fork for decoration.
- Beat the egg and brush it over the top of each pastry for a golden finish.
- Place the pastries on a baking sheet lined with parchment paper and bake in the preheated oven for 25-30 minutes, or until golden brown.
- Remove from the oven and let cool for a few minutes before serving.
