Ingredients
- pork shoulder - 150 grams
- chicken breast - 100 grams
- duck liver - 50 grams
- shallot - 1, finely chopped
- garlic - 1 clove, minced
- fresh thyme - 1 teaspoon, chopped
- salt - 1/2 teaspoon
- black pepper - 1/4 teaspoon
- egg - 1, beaten (for egg wash)
- puff pastry - 250 grams
- egg yolk - 1 (for filling mix)
- heavy cream - 50 ml
- white wine - 30 ml
Steps
- Preheat the oven to 200°C (390°F).
- In a skillet, sauté the shallot and garlic in a bit of oil until softened.
- In a bowl, combine the minced pork shoulder, chicken breast, duck liver, sautéed shallots, garlic, thyme, salt, pepper, egg yolk, heavy cream, and white wine. Mix until well combined.
- Roll out the puff pastry on a lightly floured surface to about 3mm thickness. Cut a rectangle big enough to wrap around the filling.
- Place the meat mixture in the center of the pastry, shaping it into a log.
- Fold the pastry over the filling and seal the edges, trimming any excess pastry if necessary. Make a small slit on top for steam to escape.
- Brush the top with beaten egg to give it a golden color.
- Place the wrapped pâté on a baking sheet and bake for 30-35 minutes or until golden brown.
- Let it cool for 10 minutes before slicing and serving.
