Ingredients

  • pork shoulder - 150 grams
  • chicken breast - 100 grams
  • duck liver - 50 grams
  • shallot - 1, finely chopped
  • garlic - 1 clove, minced
  • fresh thyme - 1 teaspoon, chopped
  • salt - 1/2 teaspoon
  • black pepper - 1/4 teaspoon
  • egg - 1, beaten (for egg wash)
  • puff pastry - 250 grams
  • egg yolk - 1 (for filling mix)
  • heavy cream - 50 ml
  • white wine - 30 ml

Steps

  1. Preheat the oven to 200°C (390°F).
  2. In a skillet, sauté the shallot and garlic in a bit of oil until softened.
  3. In a bowl, combine the minced pork shoulder, chicken breast, duck liver, sautéed shallots, garlic, thyme, salt, pepper, egg yolk, heavy cream, and white wine. Mix until well combined.
  4. Roll out the puff pastry on a lightly floured surface to about 3mm thickness. Cut a rectangle big enough to wrap around the filling.
  5. Place the meat mixture in the center of the pastry, shaping it into a log.
  6. Fold the pastry over the filling and seal the edges, trimming any excess pastry if necessary. Make a small slit on top for steam to escape.
  7. Brush the top with beaten egg to give it a golden color.
  8. Place the wrapped pâté on a baking sheet and bake for 30-35 minutes or until golden brown.
  9. Let it cool for 10 minutes before slicing and serving.
