  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Egg - 1 large, beaten
  • Bread crumbs - 2 tablespoons

Steps

  1. Peel and chop the russet potatoes into evenly sized cubes. Place them in a pot of salted water and bring to a boil.
  2. Cook the potatoes for about 15-20 minutes until they are fork-tender. Drain and return to the pot.
  3. While the potatoes are boiling, heat olive oil in a skillet over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and cook for an additional minute.
