Ingredients

  • White fish fillet (such as cod or sole) - 200 grams
  • Cream cheese (light) - 100 grams
  • Fresh dill - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Garlic - 1 clove, minced
  • Shallot - 1 small, finely chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 1 tablespoon
  • Capers - 1 tablespoon, rinsed and chopped
  • Whole grain bread - 2 slices, for serving

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Place the white fish fillet on a baking sheet, drizzle with olive oil, and season with salt and pepper. Bake for 15-20 minutes or until the fish is cooked through and flakes easily with a fork.
  3. While the fish is baking, heat a small skillet over medium heat and add a little olive oil. Sauté the shallot and minced garlic until they are soft and translucent, about 3-4 minutes. Remove from heat and let cool.
  4. In a food processor, combine the baked fish, cream cheese, dill, lemon juice, capers, and the sautéed shallot and garlic. Blend until smooth and creamy, adjusting seasoning with salt and pepper if necessary.
  5. Transfer the pâté to a serving dish and refrigerate for at least 10 minutes to allow the flavors to meld.
  6. Serve chilled with slices of whole grain bread.
