- Chickpeas - 200 grams (cooked or canned)
- Tahini - 2 tablespoons
- Garlic - 1 clove, minced
- Lemon juice - 2 tablespoons
- Olive oil - 2 tablespoons
- Ground cumin - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Water - 2 tablespoons
- Fresh parsley - 1 tablespoon, chopped (for garnish)
Steps
- If using dried chickpeas, soak them overnight and cook until tender. If using canned chickpeas, drain and rinse them.
- In a food processor, combine the cooked chickpeas, tahini, minced garlic, lemon juice, olive oil, ground cumin, salt, black pepper, and water.
- Blend the mixture until smooth and creamy, scraping down the sides as needed. If the mixture is too thick, add more water, one tablespoon at a time.
- Taste and adjust seasoning if necessary.
- Transfer the pâté to a serving bowl and drizzle with a little olive oil. Garnish with chopped fresh parsley.
- Serve with crusty bread, crackers, or fresh vegetable sticks.
