Ingredients

  • Chickpeas - 200 grams (cooked or canned)
  • Tahini - 2 tablespoons
  • Garlic - 1 clove, minced
  • Lemon juice - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Water - 2 tablespoons
  • Fresh parsley - 1 tablespoon, chopped (for garnish)

Steps

  1. If using dried chickpeas, soak them overnight and cook until tender. If using canned chickpeas, drain and rinse them.
  2. In a food processor, combine the cooked chickpeas, tahini, minced garlic, lemon juice, olive oil, ground cumin, salt, black pepper, and water.
  3. Blend the mixture until smooth and creamy, scraping down the sides as needed. If the mixture is too thick, add more water, one tablespoon at a time.
  4. Taste and adjust seasoning if necessary.
  5. Transfer the pâté to a serving bowl and drizzle with a little olive oil. Garnish with chopped fresh parsley.
  6. Serve with crusty bread, crackers, or fresh vegetable sticks.
