- Puff pastry - 250 grams
- Spinach - 100 grams, chopped
- Mushrooms - 150 grams, finely chopped
- Carrot - 1 medium, grated
- Onion - 1 small, diced
- Garlic - 2 cloves, minced
- Ricotta cheese - 150 grams
- Egg - 1 large (for egg wash)
- Thyme - 1 teaspoon, dried
- Nutmeg - 1/4 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons
Steps
- Preheat the oven to 200°C (390°F).
- In a skillet, heat olive oil over medium heat. Add diced onion and minced garlic, cooking until translucent.
- Add the chopped mushrooms and grated carrot to the skillet, sautéing until the vegetables are softened, about 5 minutes.
- Stir in the chopped spinach and cook until wilted. Season with thyme, nutmeg, salt, and black pepper. Remove from heat and let cool.
- In a bowl, mix the cooled vegetable mixture with ricotta cheese until well combined.
- Roll out the puff pastry on a lightly floured surface to about 3mm thickness. Cut it into two rectangles, each measuring approximately 20x15 cm.
- Place half of the vegetable and ricotta mixture in the center of each pastry rectangle, leaving some space around the edges.
- Fold the pastry over to encase the filling, pressing the edges to seal. Use a fork to crimp the edges for a decorative touch.
- Beat the egg and brush it over the top of each pastry for a golden finish.
- Place the pastries on a baking sheet lined with parchment paper and bake for 25-30 minutes or until golden brown.
- Remove from the oven and let cool slightly before serving.
