Ingredients

  • Puff pastry - 250 grams
  • Spinach - 100 grams, chopped
  • Mushrooms - 150 grams, finely chopped
  • Carrot - 1 medium, grated
  • Onion - 1 small, diced
  • Garlic - 2 cloves, minced
  • Ricotta cheese - 150 grams
  • Egg - 1 large (for egg wash)
  • Thyme - 1 teaspoon, dried
  • Nutmeg - 1/4 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons

Steps

  1. Preheat the oven to 200°C (390°F).
  2. In a skillet, heat olive oil over medium heat. Add diced onion and minced garlic, cooking until translucent.
  3. Add the chopped mushrooms and grated carrot to the skillet, sautéing until the vegetables are softened, about 5 minutes.
  4. Stir in the chopped spinach and cook until wilted. Season with thyme, nutmeg, salt, and black pepper. Remove from heat and let cool.
  5. In a bowl, mix the cooled vegetable mixture with ricotta cheese until well combined.
  6. Roll out the puff pastry on a lightly floured surface to about 3mm thickness. Cut it into two rectangles, each measuring approximately 20x15 cm.
  7. Place half of the vegetable and ricotta mixture in the center of each pastry rectangle, leaving some space around the edges.
  8. Fold the pastry over to encase the filling, pressing the edges to seal. Use a fork to crimp the edges for a decorative touch.
  9. Beat the egg and brush it over the top of each pastry for a golden finish.
  10. Place the pastries on a baking sheet lined with parchment paper and bake for 25-30 minutes or until golden brown.
  11. Remove from the oven and let cool slightly before serving.
