Ingredients

  • Puff pastry - 250 grams
  • Spinach - 100 grams, chopped
  • Mushrooms - 100 grams, finely diced
  • Carrot - 1 medium, grated
  • Red onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Egg - 1 (for egg wash)
  • Cream cheese - 100 grams
  • Fresh parsley - 2 tablespoons, chopped
  • Thyme - 1 teaspoon, fresh or dried
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 1 tablespoon

Steps

  1. Preheat the oven to 200°C (392°F).
  2. In a skillet, heat olive oil over medium heat. Add chopped red onion and minced garlic, sautéing until translucent.
  3. Add diced mushrooms and grated carrot to the skillet, cooking until softened, about 5 minutes.
  4. Stir in the chopped spinach and cook until wilted. Season with salt, black pepper, and thyme. Remove from heat and let cool slightly.
  5. In a bowl, mix the cooled vegetable mixture with cream cheese and chopped parsley until well combined.
  6. Roll out the puff pastry on a floured surface to about 3mm thick, and cut into two rectangles (about 15cm x 20cm).
  7. Place half of the vegetable mixture in the center of each pastry rectangle, leaving a border around the edges.
  8. Fold the edges of the pastry over the filling to create a pocket, sealing the edges by pressing with a fork.
  9. Beat the egg and brush the mixture over the top of each pastry for a golden finish.
  10. Place the pastries on a baking sheet lined with parchment paper and bake for 25-30 minutes, or until golden brown.
  11. Remove from the oven and let cool for a few minutes before serving.
