Ingredients
- Puff pastry - 250 grams
- Spinach - 100 grams, chopped
- Mushrooms - 100 grams, finely diced
- Carrot - 1 medium, grated
- Red onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Egg - 1 (for egg wash)
- Cream cheese - 100 grams
- Fresh parsley - 2 tablespoons, chopped
- Thyme - 1 teaspoon, fresh or dried
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 1 tablespoon
Steps
- Preheat the oven to 200°C (392°F).
- In a skillet, heat olive oil over medium heat. Add chopped red onion and minced garlic, sautéing until translucent.
- Add diced mushrooms and grated carrot to the skillet, cooking until softened, about 5 minutes.
- Stir in the chopped spinach and cook until wilted. Season with salt, black pepper, and thyme. Remove from heat and let cool slightly.
- In a bowl, mix the cooled vegetable mixture with cream cheese and chopped parsley until well combined.
- Roll out the puff pastry on a floured surface to about 3mm thick, and cut into two rectangles (about 15cm x 20cm).
- Place half of the vegetable mixture in the center of each pastry rectangle, leaving a border around the edges.
- Fold the edges of the pastry over the filling to create a pocket, sealing the edges by pressing with a fork.
- Beat the egg and brush the mixture over the top of each pastry for a golden finish.
- Place the pastries on a baking sheet lined with parchment paper and bake for 25-30 minutes, or until golden brown.
- Remove from the oven and let cool for a few minutes before serving.
