Ingredients

  • Gluten-free puff pastry - 250 grams
  • Ground pork - 150 grams
  • Ground chicken - 100 grams
  • Hard-boiled eggs - 2
  • Onion - 1 small, finely chopped
  • Garlic - 1 clove, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Thyme - 1 teaspoon, dried
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Nutmeg - 1/4 teaspoon
  • Egg wash (beaten egg) - 1

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a skillet, sauté the finely chopped onion and minced garlic over medium heat until translucent, about 5 minutes.
  3. In a large mixing bowl, combine the ground pork, ground chicken, sautéed onion and garlic, fresh parsley, thyme, salt, black pepper, and nutmeg. Mix well until all ingredients are evenly incorporated.
  4. Roll out the gluten-free puff pastry on a lightly floured surface to about 3mm thick.
  5. Cut the pastry into two rectangles, approximately 20cm x 15cm each.
  6. Place half of the meat mixture in the center of each rectangle, and make a small indentation in the center of the filling.
  7. Peel and cut the hard-boiled eggs in half, placing one half in the indentation of each portion of meat.
  8. Fold the pastry over the filling to create a pocket, sealing the edges by pressing them together with your fingers or a fork.
  9. Brush the tops of the pastry with the beaten egg to give it a golden color when baked.
  10. Place the pastries on a baking sheet lined with parchment paper and bake in the preheated oven for 30-35 minutes, or until golden brown.
  11. Remove from the oven and let cool for a few minutes before serving. Enjoy warm.
