- Fresh peaches - 2 medium (peeled and sliced)
- Brown sugar - 2 tablespoons
- Cinnamon - 1/2 teaspoon
- Lemon juice - 1 tablespoon
- Almonds - 30 grams (sliced, for garnish)
- Fresh mint - a few leaves (for garnish)
Steps
- In a mixing bowl, combine the all-purpose flour and salt. Add the cold, cubed butter and mix until the mixture resembles coarse crumbs.
- Gradually add the ice water, one tablespoon at a time, mixing until the dough comes together. Form the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
- Preheat the oven to 180°C (350°F).
- In another bowl, toss the sliced peaches with brown sugar, cinnamon, and lemon juice. Set aside to marinate for 10 minutes.
- On a lightly floured surface, roll out the chilled pastry dough into a circle about 3 mm thick. Transfer it to a tart pan or a baking sheet lined with parchment paper.
- Arrange the marinated peach slices in the center of the pastry, leaving a border of about 2.5 cm. Fold the edges of the pastry over the peaches, pleating as needed to create a rustic look.
- Sprinkle the sliced almonds over the peaches and bake for 25-30 minutes, or until the pastry is golden brown.
- Remove from the oven and let cool slightly. Garnish with fresh mint leaves before serving.
