  • Fresh peaches - 2 medium (peeled and sliced)
  • Brown sugar - 2 tablespoons
  • Cinnamon - 1/2 teaspoon
  • Lemon juice - 1 tablespoon
  • Almonds - 30 grams (sliced, for garnish)
  • Fresh mint - a few leaves (for garnish)

Steps

  1. In a mixing bowl, combine the all-purpose flour and salt. Add the cold, cubed butter and mix until the mixture resembles coarse crumbs.
  2. Gradually add the ice water, one tablespoon at a time, mixing until the dough comes together. Form the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
  3. Preheat the oven to 180°C (350°F).
  4. In another bowl, toss the sliced peaches with brown sugar, cinnamon, and lemon juice. Set aside to marinate for 10 minutes.
  5. On a lightly floured surface, roll out the chilled pastry dough into a circle about 3 mm thick. Transfer it to a tart pan or a baking sheet lined with parchment paper.
  6. Arrange the marinated peach slices in the center of the pastry, leaving a border of about 2.5 cm. Fold the edges of the pastry over the peaches, pleating as needed to create a rustic look.
  7. Sprinkle the sliced almonds over the peaches and bake for 25-30 minutes, or until the pastry is golden brown.
  8. Remove from the oven and let cool slightly. Garnish with fresh mint leaves before serving.
