Ingredients

  • Carrot - 100 grams
  • Zucchini - 100 grams
  • Red Bell Pepper - 100 grams
  • Mushrooms - 100 grams
  • Onion - 50 grams
  • Garlic - 1 clove
  • Olive Oil - 2 tablespoons
  • Fresh Thyme - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black Pepper - 1/4 teaspoon
  • Cream Cheese - 100 grams
  • Lemon Juice - 1 tablespoon
  • Chopped Fresh Parsley - 2 tablespoons

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Finely chop the onion and garlic. Dice the carrot, zucchini, red bell pepper, and mushrooms into small pieces.
  3. In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the onion and garlic, and sauté for 3-4 minutes until translucent.
  4. Add the diced vegetables (carrot, zucchini, red bell pepper, and mushrooms) to the skillet. Season with salt, black pepper, and thyme. Cook for about 10-12 minutes, stirring occasionally, until the vegetables are tender.
  5. Remove the skillet from the heat and let the mixture cool slightly.
  6. In a food processor, combine the sautéed vegetables, cream cheese, and lemon juice. Blend until smooth and creamy.
  7. Transfer the mixture into a small baking dish and smooth the top with a spatula.
  8. Bake in the preheated oven for 15-20 minutes until heated through and slightly golden on top.
  9. Remove from the oven and let it cool for a few minutes. Garnish with chopped fresh parsley before serving.
  10. Serve warm or at room temperature with crusty bread or crackers.
