- Salt - 1/2 teaspoon

- Cream Cheese - 100 grams
- Lemon Juice - 1 tablespoon
- Chopped Fresh Parsley - 2 tablespoons
Steps
- Preheat the oven to 180°C (350°F).
- Finely chop the onion and garlic. Dice the carrot, zucchini, red bell pepper, and mushrooms into small pieces.
- In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the onion and garlic, and sauté for 3-4 minutes until translucent.
- Add the diced vegetables (carrot, zucchini, red bell pepper, and mushrooms) to the skillet. Season with salt, black pepper, and thyme. Cook for about 10-12 minutes, stirring occasionally, until the vegetables are tender.
- Remove the skillet from the heat and let the mixture cool slightly.
- In a food processor, combine the sautéed vegetables, cream cheese, and lemon juice. Blend until smooth and creamy.
- Transfer the mixture into a small baking dish and smooth the top with a spatula.
- Bake in the preheated oven for 15-20 minutes until heated through and slightly golden on top.
- Remove from the oven and let it cool for a few minutes. Garnish with chopped fresh parsley before serving.
- Serve warm or at room temperature with crusty bread or crackers.
