  • Coconut sugar - 50 grams
  • Lemon juice - 15 ml
  • Cornstarch - 10 grams (for dusting)
  • Water - 50 ml

Steps

  1. In a small saucepan, combine the fruit puree, coconut sugar, lemon juice, and water. Heat over medium heat until the sugar has dissolved, stirring occasionally.
  2. Once the mixture is warm, sprinkle in the agar-agar powder while whisking continuously to avoid lumps. Bring the mixture to a gentle boil and simmer for about 5 minutes, stirring constantly.
  3. Pour the mixture into a lined, shallow dish (approximately 15x15 cm) and spread evenly. Allow it to cool at room temperature for 15-20 minutes until it starts to set.
  4. Refrigerate the dish for at least 2 hours or until fully set and firm.
  5. Once set, remove from the dish and cut into squares or desired shapes. Dust with cornstarch to prevent sticking.
