Steps
- In a small saucepan, combine the fruit puree, coconut sugar, lemon juice, and water. Heat over medium heat until the sugar has dissolved, stirring occasionally.
- Once the mixture is warm, sprinkle in the agar-agar powder while whisking continuously to avoid lumps. Bring the mixture to a gentle boil and simmer for about 5 minutes, stirring constantly.
- Pour the mixture into a lined, shallow dish (approximately 15x15 cm) and spread evenly. Allow it to cool at room temperature for 15-20 minutes until it starts to set.
- Refrigerate the dish for at least 2 hours or until fully set and firm.
- Once set, remove from the dish and cut into squares or desired shapes. Dust with cornstarch to prevent sticking.
