Ingredients

  • Duck liver - 200 grams
  • Shallots - 1 medium, finely chopped
  • Garlic - 1 clove, minced
  • Fresh thyme - 1 teaspoon, chopped
  • Fresh parsley - 1 tablespoon, chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cognac or Armagnac - 2 tablespoons
  • Unsalted butter - 30 grams
  • Olive oil - 1 tablespoon

Steps

  1. In a skillet, heat the olive oil over medium heat and sauté the shallots and garlic until translucent, about 3-4 minutes.
  2. Add the duck liver to the skillet and cook for 3-4 minutes on each side until browned but still slightly pink in the center.
  3. Remove the liver from the heat and let it cool slightly, then transfer it to a food processor.
  4. Add the thyme, parsley, salt, black pepper, Cognac, and half of the butter to the food processor. Blend until smooth.
  5. Transfer the mixture to a small terrine or bowl, smoothing the top. Melt the remaining butter and pour it over the top to seal.
  6. Cover and refrigerate for at least 30 minutes to allow the flavors to meld and the pâté to set.
  7. Serve chilled with whole-grain crackers or toasted baguette slices.
