- Duck liver - 200 grams
- Shallots - 1 medium, finely chopped
- Garlic - 1 clove, minced
- Fresh thyme - 1 teaspoon, chopped
- Fresh parsley - 1 tablespoon, chopped
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Cognac or Armagnac - 2 tablespoons
- Unsalted butter - 30 grams
- Olive oil - 1 tablespoon
Steps
- In a skillet, heat the olive oil over medium heat and sauté the shallots and garlic until translucent, about 3-4 minutes.
- Add the duck liver to the skillet and cook for 3-4 minutes on each side until browned but still slightly pink in the center.
- Remove the liver from the heat and let it cool slightly, then transfer it to a food processor.
- Add the thyme, parsley, salt, black pepper, Cognac, and half of the butter to the food processor. Blend until smooth.
- Transfer the mixture to a small terrine or bowl, smoothing the top. Melt the remaining butter and pour it over the top to seal.
- Cover and refrigerate for at least 30 minutes to allow the flavors to meld and the pâté to set.
- Serve chilled with whole-grain crackers or toasted baguette slices.
