Ingredients

  • Chicken liver - 250 grams
  • Bacon - 100 grams, diced
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Thyme - 1 teaspoon, dried
  • Rosemary - 1 teaspoon, dried
  • Sea salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 1 tablespoon
  • Egg - 1 large
  • Coconut cream - 60 ml

Steps

  1. In a skillet, heat the olive oil over medium heat. Add the diced bacon and cook until crispy, then remove and set aside, leaving the fat in the pan.
  2. In the same skillet, add the chopped onion and minced garlic. Sauté until the onion is translucent, about 5 minutes.
  3. Add the chicken livers to the skillet, season with thyme, rosemary, salt, and pepper. Cook until the livers are browned on the outside but still slightly pink in the center, about 5-7 minutes.
  4. Remove the skillet from heat and let the mixture cool slightly. Then transfer it to a food processor.
  5. Add the cooked bacon, egg, and coconut cream to the food processor. Blend until smooth and creamy, adjusting seasoning if needed.
  6. Transfer the mixture to a small terrine or ramekin. Smooth the top and cover with plastic wrap or a lid.
  7. Refrigerate for at least 2 hours to allow the pâté to firm up before serving.
