- Mushrooms (cremini or button) - 200 grams, finely chopped
- Olive oil - 2 tablespoons
- Shallot - 1, finely chopped
- Garlic - 2 cloves, minced
- Fresh thyme - 1 teaspoon, chopped
- Fresh parsley - 2 tablespoons, chopped
- Soy sauce - 1 tablespoon
- Nutritional yeast - 2 tablespoons
- Lemon juice - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Walnuts - 50 grams, finely chopped
Steps
- Heat olive oil in a skillet over medium heat. Add the chopped shallot and sauté for about 3 minutes until translucent.
- Add the minced garlic and cook for an additional 1 minute, being careful not to burn it.
- Stir in the chopped mushrooms and cook for about 10 minutes, until they release their moisture and become tender.
- Add the chopped thyme, soy sauce, nutritional yeast, lemon juice, salt, and pepper. Cook for another 5 minutes, stirring occasionally.
- Remove the skillet from heat and let the mixture cool slightly.
- Transfer the mixture to a food processor, add the chopped walnuts, and blend until smooth, scraping down the sides as necessary.
- Taste and adjust seasoning if needed. Transfer the pâté to a serving bowl and refrigerate for at least 1 hour to allow the flavors to meld.
- Serve chilled or at room temperature with bread or crackers.
