Ingredients

  • Mushrooms (cremini or button) - 200 grams, finely chopped
  • Olive oil - 2 tablespoons
  • Shallot - 1, finely chopped
  • Garlic - 2 cloves, minced
  • Fresh thyme - 1 teaspoon, chopped
  • Fresh parsley - 2 tablespoons, chopped
  • Soy sauce - 1 tablespoon
  • Nutritional yeast - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Walnuts - 50 grams, finely chopped

Steps

  1. Heat olive oil in a skillet over medium heat. Add the chopped shallot and sauté for about 3 minutes until translucent.
  2. Add the minced garlic and cook for an additional 1 minute, being careful not to burn it.
  3. Stir in the chopped mushrooms and cook for about 10 minutes, until they release their moisture and become tender.
  4. Add the chopped thyme, soy sauce, nutritional yeast, lemon juice, salt, and pepper. Cook for another 5 minutes, stirring occasionally.
  5. Remove the skillet from heat and let the mixture cool slightly.
  6. Transfer the mixture to a food processor, add the chopped walnuts, and blend until smooth, scraping down the sides as necessary.
  7. Taste and adjust seasoning if needed. Transfer the pâté to a serving bowl and refrigerate for at least 1 hour to allow the flavors to meld.
  8. Serve chilled or at room temperature with bread or crackers.
