Ingredients

  • Walnuts - 100 grams
  • Mushrooms (finely chopped) - 150 grams
  • Carrot (grated) - 1 medium
  • Onion (finely chopped) - 1 medium
  • Garlic (minced) - 2 cloves
  • Soy sauce - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Thyme (dried) - 1 teaspoon
  • Rosemary (dried) - 1 teaspoon
  • Ground flaxseed - 2 tablespoons
  • Water - 6 tablespoons
  • Nutritional yeast - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Puff pastry (vegan) - 1 sheet

Steps

  1. Preheat your oven to 200°C (400°F).
  2. In a skillet, heat olive oil over medium heat. Add the onions and garlic, sautéing until translucent.
  3. Add the chopped mushrooms and grated carrot to the skillet. Cook for about 5-7 minutes until the mushrooms release their moisture and begin to brown.
  4. In a mixing bowl, combine the walnuts, sautéed mixture, soy sauce, thyme, rosemary, nutritional yeast, ground flaxseed, water, salt, and black pepper. Mix well until a coarse paste forms.
  5. Roll out the puff pastry sheet and place it into a small loaf pan or terrine mold, leaving excess pastry hanging over the edges.
  6. Fill the pastry-lined pan with the walnut and mushroom mixture, pressing down gently to compact it.
  7. Fold the overhanging pastry over the top of the filling, sealing it well.
  8. Bake in the preheated oven for 30-35 minutes or until the pastry is golden brown.
  9. Allow to cool for 10 minutes before carefully removing from the pan.
  10. Serve warm or at room temperature, sliced, and enjoy!
