- Walnuts - 100 grams
- Mushrooms (finely chopped) - 150 grams
- Carrot (grated) - 1 medium
- Onion (finely chopped) - 1 medium
- Garlic (minced) - 2 cloves
- Soy sauce - 2 tablespoons
- Olive oil - 2 tablespoons
- Thyme (dried) - 1 teaspoon
- Rosemary (dried) - 1 teaspoon
- Ground flaxseed - 2 tablespoons
- Water - 6 tablespoons
- Nutritional yeast - 2 tablespoons
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Puff pastry (vegan) - 1 sheet
Steps
- Preheat your oven to 200°C (400°F).
- In a skillet, heat olive oil over medium heat. Add the onions and garlic, sautéing until translucent.
- Add the chopped mushrooms and grated carrot to the skillet. Cook for about 5-7 minutes until the mushrooms release their moisture and begin to brown.
- In a mixing bowl, combine the walnuts, sautéed mixture, soy sauce, thyme, rosemary, nutritional yeast, ground flaxseed, water, salt, and black pepper. Mix well until a coarse paste forms.
- Roll out the puff pastry sheet and place it into a small loaf pan or terrine mold, leaving excess pastry hanging over the edges.
- Fill the pastry-lined pan with the walnut and mushroom mixture, pressing down gently to compact it.
- Fold the overhanging pastry over the top of the filling, sealing it well.
- Bake in the preheated oven for 30-35 minutes or until the pastry is golden brown.
- Allow to cool for 10 minutes before carefully removing from the pan.
- Serve warm or at room temperature, sliced, and enjoy!
