Ingredients

  • Cooked lentils - 150 grams
  • Mushrooms (finely chopped) - 100 grams
  • Carrot (grated) - 1 medium
  • Onion (finely chopped) - 1 small
  • Garlic (minced) - 2 cloves
  • Walnuts (chopped) - 50 grams
  • Fresh thyme - 1 teaspoon
  • Fresh parsley (chopped) - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Nutritional yeast - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Vegan butter - for spreading

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a skillet, heat 1 tablespoon of olive oil over medium heat and sauté the onions and garlic until translucent, about 5 minutes.
  3. Add the finely chopped mushrooms and grated carrot to the skillet and cook for another 7-10 minutes until the mushrooms release their moisture and become tender.
  4. In a mixing bowl, combine the cooked lentils, sautéed vegetable mixture, chopped walnuts, thyme, parsley, soy sauce, nutritional yeast, and season with salt and black pepper. Mix well until combined.
  5. Transfer the mixture to a greased loaf pan, pressing it down firmly to ensure it holds its shape.
  6. Drizzle the top with the remaining tablespoon of olive oil and smooth it out with a spatula.
  7. Cover the loaf pan with foil and bake in the preheated oven for 25 minutes.
  8. Remove the foil and bake for an additional 10-15 minutes until the top is slightly crisp.
  9. Let the pâté cool for at least 10 minutes before slicing. Serve with vegan butter and crusty bread.
