- Cooked lentils - 150 grams
- Mushrooms (finely chopped) - 100 grams
- Carrot (grated) - 1 medium
- Onion (finely chopped) - 1 small
- Garlic (minced) - 2 cloves
- Walnuts (chopped) - 50 grams
- Fresh thyme - 1 teaspoon
- Fresh parsley (chopped) - 2 tablespoons
- Soy sauce - 1 tablespoon
- Nutritional yeast - 2 tablespoons
- Olive oil - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
- Vegan butter - for spreading
Steps
- Preheat the oven to 180°C (350°F).
- In a skillet, heat 1 tablespoon of olive oil over medium heat and sauté the onions and garlic until translucent, about 5 minutes.
- Add the finely chopped mushrooms and grated carrot to the skillet and cook for another 7-10 minutes until the mushrooms release their moisture and become tender.
- In a mixing bowl, combine the cooked lentils, sautéed vegetable mixture, chopped walnuts, thyme, parsley, soy sauce, nutritional yeast, and season with salt and black pepper. Mix well until combined.
- Transfer the mixture to a greased loaf pan, pressing it down firmly to ensure it holds its shape.
- Drizzle the top with the remaining tablespoon of olive oil and smooth it out with a spatula.
- Cover the loaf pan with foil and bake in the preheated oven for 25 minutes.
- Remove the foil and bake for an additional 10-15 minutes until the top is slightly crisp.
- Let the pâté cool for at least 10 minutes before slicing. Serve with vegan butter and crusty bread.
