Ingredients
- Portobello mushrooms - 200 grams, finely chopped
- Olive oil - 2 tablespoons
- Shallots - 1, finely chopped
- Garlic - 2 cloves, minced
- Carrot - 1, grated
- Walnuts - 50 grams, chopped
- Thyme - 1 teaspoon, fresh or dried
- Rosemary - 1 teaspoon, fresh or dried
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Vegetable broth - 100 ml
- Soy sauce - 1 tablespoon
- Bread crumbs - 50 grams
- Egg - 1, beaten
- Fresh parsley - 2 tablespoons, chopped for garnish
Steps
- Preheat the oven to 180°C (350°F).
- In a skillet, heat the olive oil over medium heat and sauté the shallots and garlic until translucent.
- Add the chopped mushrooms and carrot, and cook until the mushrooms are soft and the moisture has evaporated, about 10 minutes.
- Stir in the chopped walnuts, thyme, rosemary, salt, and pepper, and cook for an additional 2-3 minutes.
- Add the vegetable broth and soy sauce, and cook for another 5 minutes until the mixture is well combined and slightly thickened.
- Remove from heat and let cool for a few minutes.
- In a mixing bowl, combine the mushroom mixture with bread crumbs and beaten egg until fully incorporated.
- Transfer the mixture into a small loaf pan lined with parchment paper, pressing it down firmly.
- Cover the pan with aluminum foil and place it in a baking dish filled with water to create a water bath.
- Bake in the preheated oven for 30-35 minutes, or until the top is firm and slightly golden.
- Once cooked, remove from the oven and let cool to room temperature, then refrigerate for at least 2 hours before serving.
- Garnish with fresh parsley and serve with crusty bread and pickles.
