Ingredients

  • Portobello mushrooms - 200 grams, finely chopped
  • Olive oil - 2 tablespoons
  • Shallots - 1, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1, grated
  • Walnuts - 50 grams, chopped
  • Thyme - 1 teaspoon, fresh or dried
  • Rosemary - 1 teaspoon, fresh or dried
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Vegetable broth - 100 ml
  • Soy sauce - 1 tablespoon
  • Bread crumbs - 50 grams
  • Egg - 1, beaten
  • Fresh parsley - 2 tablespoons, chopped for garnish

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a skillet, heat the olive oil over medium heat and sauté the shallots and garlic until translucent.
  3. Add the chopped mushrooms and carrot, and cook until the mushrooms are soft and the moisture has evaporated, about 10 minutes.
  4. Stir in the chopped walnuts, thyme, rosemary, salt, and pepper, and cook for an additional 2-3 minutes.
  5. Add the vegetable broth and soy sauce, and cook for another 5 minutes until the mixture is well combined and slightly thickened.
  6. Remove from heat and let cool for a few minutes.
  7. In a mixing bowl, combine the mushroom mixture with bread crumbs and beaten egg until fully incorporated.
  8. Transfer the mixture into a small loaf pan lined with parchment paper, pressing it down firmly.
  9. Cover the pan with aluminum foil and place it in a baking dish filled with water to create a water bath.
  10. Bake in the preheated oven for 30-35 minutes, or until the top is firm and slightly golden.
  11. Once cooked, remove from the oven and let cool to room temperature, then refrigerate for at least 2 hours before serving.
  12. Garnish with fresh parsley and serve with crusty bread and pickles.
