  • Puff pastry - 250 grams
  • Zucchini - 100 grams, grated
  • Carrot - 100 grams, grated
  • Bell pepper - 50 grams, finely chopped
  • Mushrooms - 100 grams, finely chopped
  • Spinach - 100 grams, wilted and chopped
  • Onion - 1 small, diced
  • Garlic - 1 clove, minced
  • Olive oil - 1 tablespoon
  • Egg - 1, beaten (for egg wash)
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Nutmeg - a pinch
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Preheat your oven to 200°C (400°F).
  2. In a skillet, heat olive oil over medium heat. Add the diced onion and minced garlic, sautéing until translucent.
  3. Add the grated zucchini, carrot, and chopped bell pepper to the skillet. Cook for about 5 minutes until softened.
  4. Stir in the chopped mushrooms and wilted spinach, cooking for another 5 minutes. Season with salt, black pepper, nutmeg, and chopped parsley. Remove from heat and let the mixture cool.
  5. Roll out the puff pastry on a lightly floured surface to fit a rectangular baking dish.
  6. Place half of the pastry in the baking dish, allowing the edges to hang over the sides. Fill with the vegetable mixture, spreading it evenly.
  7. Cover the filling with the remaining puff pastry, sealing the edges by crimping with a fork.
  8. Brush the top with the beaten egg to create a golden crust.
  9. Cut a few slits in the top of the pastry to allow steam to escape.
  10. Bake in the preheated oven for 25-30 minutes, or until the pastry is golden brown.
  11. Remove from the oven and let cool for a few minutes before slicing. Serve warm.
