- Puff pastry - 250 grams
- Zucchini - 100 grams, grated
- Carrot - 100 grams, grated
- Bell pepper - 50 grams, finely chopped
- Mushrooms - 100 grams, finely chopped
- Spinach - 100 grams, wilted and chopped
- Onion - 1 small, diced
- Garlic - 1 clove, minced
- Olive oil - 1 tablespoon
- Egg - 1, beaten (for egg wash)
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Nutmeg - a pinch
- Fresh parsley - 2 tablespoons, chopped
Steps
- Preheat your oven to 200°C (400°F).
- In a skillet, heat olive oil over medium heat. Add the diced onion and minced garlic, sautéing until translucent.
- Add the grated zucchini, carrot, and chopped bell pepper to the skillet. Cook for about 5 minutes until softened.
- Stir in the chopped mushrooms and wilted spinach, cooking for another 5 minutes. Season with salt, black pepper, nutmeg, and chopped parsley. Remove from heat and let the mixture cool.
- Roll out the puff pastry on a lightly floured surface to fit a rectangular baking dish.
- Place half of the pastry in the baking dish, allowing the edges to hang over the sides. Fill with the vegetable mixture, spreading it evenly.
- Cover the filling with the remaining puff pastry, sealing the edges by crimping with a fork.
- Brush the top with the beaten egg to create a golden crust.
- Cut a few slits in the top of the pastry to allow steam to escape.
- Bake in the preheated oven for 25-30 minutes, or until the pastry is golden brown.
- Remove from the oven and let cool for a few minutes before slicing. Serve warm.
